Enchilada Dinner

  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 1 can enchilada sauce
  • 1 can cheese soup
  • 1 can cream of mushroom soup
  • 2 can corn, drained
  • 1 can pinto beans, drained
  • 1/4 cup chopped olives
  • 1 can Rotel Sauce
  • 1 tsp each chili powder, garlic salt
  • 3 large corn tortillas
  • 1/4 cup grated cheese

Brown ground beef in sauce pan, stirring until crumbly.  Add remaining ingredients except tortillas and cheese, mix well.  Place tortilla in bottom of 9x13 pan.  Spoon 1/4 of ground beef mixture over tortilla.  Sprinkle with cheese. Repeat layers until all ingredients are used ending with cheese.  Bake 30 to 45 minutes at 350 degrees.
