Blackberry Cobbler

  • 8 cups fresh or 3 lbs. frozen berries*

  • 2 cups sugar

  • 1/2 cup all purpose flour

  • 2 Tbl. Corn Starch

For the crust, use the pie crust recipe.

On a floured surface, roll out enough of the dough to form an 18 inch by 14 inch rectangle.  Carefully place onto the bottom and up the sides of a 13 inch by 9 inch by 2 inch glass baking dish.  Combine berries, sugar and flour; pour into crust.  Roll out for cobbler.  Brush pastry top butter, sprinkle cinnamon and sugar.  Bake at 400 degrees for 15 minutes; reduce heat to 350 degree.  Bake about 1 hour longer or until bubbly.  Cool completely.  Store in the refrigerator.

*     If using frozen berries, do not thaw.
