Pecan Pie

  • cup pecan halves
  • 1 (9-inch) unbaked pie crust
  • 1 cup corn syrup
  • 3/4 cup sugar
  • 3 Tbs butter, melted
  • 1 tsp vanilla
  • 3 eggs, slightly beaten

Preheat oven to 375 degrees.  Place pecans in pie crust and make sure pecans are evenly distributed in curst. In bowl, combine corn syrup, sugar, butter, vanilla and eggs and mix well.  Pour into pie crust and rearrange pecans, if necessary.  Place 1-inch strips of foil around edges of pie crust to keep from browning too much.  Bake for 10 minutes, reduce heat to 325 and cook for 45 minutes or until center sets.
