Gumbo

  • 5-6 lb. Boiled Chicken in (16 cups of water covered), de-boned
  • 2 cups of Onions
  • 2 cans Whole Tomatoes diced with juice
  • 2 Green Peppers
  • 4 cups Okra
  • 4 teaspoons Cajun Spice
  • 1 teaspoons Black Pepper
  • 2 cups Minute Rice

Add all above ingredients except chicken to stock pot. Bring broth to boil, reduce heat and cover. Simmer for 30 minutes. Add water for desired consistence. When rice is done, add chicken.
