Country Pasta with Mozzarella 

  • 8 oz uncooked rigatoni

  • 8 slices bacon, cut into 1” pieces

  • 2 cups broccoli flowerets

  • ½ tsp. minced fresh garlic

  • 2 cups (8oz) shredded Mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • 1/8 tsp. cayenne pepper

  • ¼ cup chopped fresh parsley

 Cook rigatoni according to package directions; drain.  Meanwhile, in 10” skillet cook bacon over medium high heat, stirring occasionally, until bacon is browned (6 to 8 minutes).  Reduce heat to medium.  Add broccoli and garlic.  Cook, stirring occasionally, until broccoli is crisply tender (4 to 5 minutes).  Add rigatoni and remaining ingredients except parsley.  Continue cooking, stirring occasionally, until cheese is melted (3 to 5 minutes).  Sprinkle with parsley.
