Chicken and Rice Soup

  • 1 Small onion
  • 2 Quarts Chicken Broth
  • 5 stalks of chopped celery
  • 1 Cup sliced carrots
  • 4 to 5 cups Creole Rice
  • 3 Cups chopped chicken or turkey

Bring broth with onion, celery and carrots to a slow boil. Cook until vegetables are tender. Add Creole seasoning to taste. Reduce heat to a low simmer and add cooked rice and meat.
