Chicken Tansey

  • 8 Breaded boneless chicken breast

  • Provolone Cheese

  • Prosciuntto ham 

  • Fresh sliced mushrooms

  • 1 cup Riesling white wine

  • 1 lemon 

  • Fresh Broccoli 

 Sauté sliced mushrooms until lightly brown (still crisp); Set aside. Steam broccoli until cooked but still firm; Set aside.  Bake chicken breasts.

Milt 3 tablespoons of butter and sauté with a teaspoon of minced garlic.  Add one cup of wine with a 1/2 teaspoon of corn starch and the juice of a lemon. Simmer this mixture until slightly crème texture. 

Place prosciutto ham then sautéed mushroom on top of chicken breasts, cover with cheese and melt. (microwave about 30 seconds on high)  Place broccoli spear on top and cover with wine sauce. Sprinkle with crushed red pepper.
