Breakfast Casserole

  • 16 slices of bread, crust removed                      1 large onion (diced)
  • 1 lb. sharp cheese, grated                                 1 red pepper (diced)
  • 11 eggs                                                            1 can diced green chilies (drained)
  • 2 tsp. salt
  • 1 lb. cooked sausage, mild
  • 1 lb. cooked sausage, hot
  • 3 cup milk
  • 2 tsp. dry mustard
  • 1+ tsp. chili powder

 Cook onion and red pepper, with sausage; when fully cooked, drain and add green chilies. In a separate bowl, beat eggs and milk; add mustard, chili powder and salt.

In a greased 3-quart pan, Spread a layer of bread, ½ meat mix and ½ cheese. Add another layer of bread then remainder of meat mix. Pour eggs mix over pan and spread remainder of cheese over the top. Refrigerate over night. Bake at 350 degrees for 45 minutes. Let set ½ hour before serving.
